Trofie Pasta with Shrimps, Cherry Tomatoes and Rocket Salad
This Italian recipe is about a first course made with a type of pasta called Trofie that is traditional of Liguria in the northern part of Italy. This type of Italian pasta is ideal for any kind of sauce like tomato sauce or Genoese pesto: here I presented a delicious sauce made with shrimps, cherry tomatoes, rocket salad and rum. This Italian recipe is a fresh recipe simple to prepare that allow you to obtain a good result in few minutes.

INGREDIENTS (for 4 people):
320g of Trofie (a particular type of pasta)
1 Brunch of rocket salad
350g of Shrimps pre-cooked
4 Tablespoons of Extra virgin olive oil
20 Cherry tomatoes
Salt
Pepper
1 Clove of
1 Glasses of rum

PREPARATION TIME: 15 minutes

COOKING TIME: 20 minutes

WINE: Vermentino di Gallura Doc (White Wine)

PREPARATION
Preheat a pan with extra virgin olive oil, brown in it the clove of garlic and remove it when it is brown. Add shrimps,

before cleaned, cook for 10 minutes, add rum and let it evaporated, then add the cherry tomatoes, before cleaned and cut in half.

Now sprinkle with salt and pepper and 1 glass of water and continue to cook for about 10 minutes.

When cooking is completed, add rocket salad, before cleaned and cut, and continue for other some minutes the cooking.

In the meanwhile cook Trofie in salt-boiling water.

When Trofie are ready drain them and add them to the pan with sauce. Serve hot.

Tails of Shrimps with Oil and Lemon

In my family the menu of Christmas Eve is fish based. One of the side dishes that we prepare is made of tails of shrimps dressed with lemon and oil. This recipe is very simple to prepare and very good to eat.

INGREDIENTS (for 10 people):
800 g of Tails of shrimps
1 Glass of Extra virgin olive oil
2 Lemon
Salt
Parsley

PREPARATION TIME: 10 minutes

COOKING TIME: 15 minutes

WINE: Greco di Tufo (White Wine)

PREPARATION
Place the tail of shrimps in a pan with water and bring to boil.
When water boils, cook for 5 minutes and then drain the shrimps. Let them cool and shell.
Prepare a sauce made with the extra virgin olive oil, the juice of lemon, some salt and parsley. Place the tail of shrimps on a platter and pour the sauce on them. This is the result:

Pasta with Tomatoes Shrimps and Cream

This is a recipe for a very simple ad easy dish!

INGREDIENTS (for 2 people)
160 g of Pasta (type Radiatori)
150 g of Tomatoes sauce
100 g of Shrimps
75 ml of Cream
1 / 4 of Onion, chopped
2 Sweet cherry tomatoes
Some rocket salad
2 Tablespoons of extra virgin olive oil
Salt

PREPARATION TIME: 10 minutes

COOKING TIME: 20 minutes

WINE: Verdicchio Castelli di Jesi (White Wine)

PREPARATION
Cook the pasta in a pan of boiling for about 10 minutes, salted water. Heat the extra virgin olive oil in a pan and fry the onion until soft. Add the tomatoes sauce, season with salt and cook for about 5 minutes. Add the shrimps cook for another 10 minutes.
At the end add the cream, stir and let the mixture reduce.
Drain pasta and transfer to a bowl. Pour over the sauce toss well and serve hot with a sweet cherry tomato and some rocket salad. This is the result:

Shrimps with Pink Grapefruit

An unusual recipe for a fresh and tasty appetizer!

INGREDIENTS (for 4 people)
200 g of Shrimps
2 Pink grapefruits
3 Tablespoons of extra virgin olive oil
100 g Salad (rocket or lettuce)
25 ml of White wine
Salt
Pepper
8 Sweet cherry tomatoes

PREPARATION TIME: 10 minutes

COOKING TIME: 15 minutes

WINE: Fuga Chardonnay (White Wine)

PREPARATION
Wash dry and peel the shrimps. Squeeze 1 pink grapefruit and peel the other in order to obtain only the pulp. Wash and dry the salad and the tomatoes. In a pan heat the extra virgin olive oil, add the lobsters, season with salt and pepper and let them brown. Add the grapefruit juice, the pulp of 1/2 grapefruit and the white wine at the shrimps, let it reduce and simmer for about 10 minutes.
At the end of the cooking must remain a sort of sauce. Place some salad, 2 - 3 pieces of pulp of grapefruit in a soup plate.
Add the shrimps and garnish with 2 sweet cherry tomatoes. This is the result:

Pasta with Cream, Shrimps and Speck

A delicious dish of pasta, sweet and spicy as love!

INGREDIENTS (for 2 people)

160 g of Pasta (type penne)
1 Slice of speck
80 ml of Cream
80 g of Shrimps fresh or frozen
1/4 of Onion
Salt
Pepper
3 Tablespoons of extra virgin olive oil

PREPARATION TIME: 15 minutes

COOKING TIME: 15 minutes

DIFFICULTY: easy

WINE: Fiano di Avellino (White wine)

PREPARATION
Boil some water with salt for pasta.
Wash and boil the shrimps into water for 5 minutes. Drain them and wait until they get cool.
Wash, peel the onion and chop it. Cut the speck into small cubes.
Heat 3 tablespoons of extra virgin olive oil in a pan, add onion and the cubes of speck and let them brown. Then add the shrimps and sauté them. Season with salt and pepper.

Add the cream and stir it with the other ingredients. Continue the cooking for about 5-10 minutes.
When pasta is cooked, pour the sauce on it, mix and serve hot.
