This is an Italian recipe for a
delicious soup made of prickly lettuce and beans in particular white beans or
cannellini beans. This is an Italian recipe traditional from the south of Italy
in particular from Campania. The preparation is very easy and quite fast; you
have only to remember to soak the beans 12 hours before.
INGREDIENTS (for 4 people):
700g f Prickly lettuce
200 g of Beans
1 Clove of garlic
3 Tablespoon of extra virgin olive
oil
Salt
Black Pepper
PREPARATION TIME: 15 minutes plus 12
hours
COOKING TIME: 30 minutes plus 1 hour
for the beans
WINE: Cabernet Sauvignon (Red WIne)
PREPARATION
Soak the beans with water for 12
hours. Boil the beans for about 1 hour.
Wash and cut the prickly lettuce. Preheat the
extra virgin olive oil in a large pan, add the garlic and let it become golden.
Add the prickly lettuce, 2 glass of water and let it sauté for about 5-10
minutes.
When the prickly lettuce is ready add the beans and some more water
and continue to cook for other 10 minutes.
Sprinkle with salt and black pepper and finish to cook for other 5
minutes.
Don’t’ let the water dry too much in
order to have a delicious soup. Serve hot with some slice of crunchy bread.
