Focaccia Bread with Onion and Green Olive


This Italian recipe for flat bread or focaccia bread comes from Puglia. It is a traditional recipe for flat bread stuffed with white onion and green olives. This focaccia bread is ideal for Carnival, Easter but also for a break during a short trip. The preparation is very easy, you have to prepare dough (here I used the same recipe for pizza) and then pre-cook the onion so that their taste will be sweeter.

INGREDIENTS for the dough:
500 g of Flour
2 Teaspoons of salt
1 Teaspoon of sugar
4 Tablespoons of extra virgin olive oil
25 g of brewer’s yeast
INGREDIENTS FOR THE FILLING:
5 big white onion
20 green olives
3 tablespoons of extra virgin olive oil
Salt

PREPARATION TIME: 30 minutes plus the time for the leaving

COOKING TIME: 40 minutes

PREPARATION
Using the ingredients that I showed for the dough follow the instruction for the preparation of pizza that you can find here. When the dough is ready after the leaving prepare the filling: cut the onion in thin slices, preheat the extra virgin olive oil in a large pan, add ten onion and let them cook for about 15 minutes, 


then add ten green olives in pieces and sprinkle with a little bit of salt. 


Continue to cook for other 5-10 minutes. Preheat the oven at 200-250 degree. Divide the dough in two parts and stand them. Oil a baking pan, place one of the two pastry and cover with the mixture of onions and olives. 


Then cover with the second pastry. 


Bake the flat bread for about 30-40 minutes. Serve hot or warm.
