Legumes soup is a first course ideal
for the cold winter. This is a very healthy recipe easy to prepare. You can mix
the legumes that you prefer more and cook a delicious soup. In this case I
cooked a legumes soup flavoured with thyme and I mainly used beans of any type,
lentils and fava beans.
INGREDIENTS (for 4 people):
2 Carrots
1 Onion
2 Celery
3 Tablespoons of Extra virgin olive
oil
300 g of mixture of legumes ( pinto
beans, black-eyed pea, cannellini beans, black beans, green beans, red lentils,
green lentils, fava bean)
1,5 liter of water
Parsley
Salt
Pepper
Thyme
PREPARATIN TIME: 15 minutes plus put
to soak the legumes 12 hours
COOKING TIME: 1 hour and 30 minutes
WINE: Nebbiolo (Red Wine)
PREPARATION
Remember to put to soak for 12 hour
the mixture of legumes. Wash the legumes and mince the carrots, the onion, and
celery. Preheat the extra virgin olive oil in a large soup pot, add the minced
vegetables and let them brown for few minutes.
Add the legumes and let them
sauté, then add the water.
When the water start to boil add the salt, pepper,
parsley and thyme. Continue to cook for about 1 hour and half until the water
will be reduced. Serve very hot with a bit of parsley on the surface and if you
like with some crunchy bread.
