Gnocchi with Ham, Saffron and Walnuts

Gnocchi with Ham, Saffron and Walnuts
This gnocchi recipe is very easy to prepare. The ingredients that you need to prepare the dough for gnocchi are all un-cooked, you just need to put them all in a bowl and mix them together. What you need is: minced ham, breadcrumbs, Parmesan, flour, milk, eggs and gnocchi will be ready in only 10 minutes. The preparation of the dressing is also very fast: only cream, saffron and walnuts that you have to cook together for 10 minutes and the dressing it will be ready. In half an hour your first course will be ready and it will be delicious.

INGREDIENTS (for 4 people):
250g or 2 cups of Flour
200 ml or 1 cup of Milk
140g or 2 cups of breadcrumbs
80g or 2,8 oz of Parmesan
100g or 3,5 oz of minced Ham
2 Eggs
200 ml or 1 cup of cream
2 Tablespoons of extra virgin olive oil
10 Walnuts
Saffron
Parsley
Salt
Nutmeg

PREPARATION TIME: 15 minutes

COOKING TIME: 10 minutes

WINE: Bonarda (Red Wine)

PREPARATION
Let the salted water boil for gnocchi. Put in a bowl the flour, the breadcrumbs, the parmesan, the minced ham, the eggs, the milk, a little bit of nutmeg and salt.

Mix everything together in order to obtain homogeneous dough.

Now divide the dough in parts and roll each one in order to obtain a sort of longs sausages thick as a finger.

Cut each long sausage in small pieces of 1 cm length.

When the water boils add the gnocchi and let them cook for 8-10 minutes or until they rise on the surface.

In the meantime prepare the dressing: preheat the extra virgin olive oil in a large pan, add the cream and the saffron and let them cook for few minutes.

Then add the crumbled walnuts and let the cream reduce a little bit not too much.

When gnocchi are ready add them to the dressing and stir.

Serve warm gnocchi sprinkled with a little bit of Parmesan.
