Pizza Prawns and Mushrooms

Pizza Prawn and Mushrooms
This is the Italian recipes for Pizza Sea and Mountain. We usually call this Pizza like this because we combined the sea-food, in this case the prawns, with mushrooms. The preparation is very easy and to obtain a better result you should cook the prawns and mushrooms separately and then place them on pizza. This pizza can be prepared as the traditional Italian pizza that wants on it the tomatoes and mozzarella cheese (here I showed this recipe) otherwise you can also prepare the so called white pizza or the pizza without tomatoes.

INGREDIENTS (for 2 pizza):
For the dough follow the recipe that you find here.
250 ml or 1 cup of Tomatoes puree
250 g or 1 cup of Mozzarella cheese
200 g or 1/2 cup of Mushrooms fresh or frozen (better Porcini)
150 g or 1/2 cup of Prawns
Salt
3 Tablespoon of extra virgin olive oil
Oregano
Parsley

PREPARATION TIME: 15 - 20 minutes is the time you need to obtain well homogeneous dough. 4-5 hours of rising. 15 minutes of preparation, the time you need to put on pizza the dressing you like more
COOKING TIME: 20 – 25 minutes

PREPARATION
Prepare the dough for pizza as described here. Half an hour before to roll out the pizza start the preparation of the ingredients you need to flavour the pizza and preheat the oven at the maximum degree, in my oven is 250 Celsius degree (482 F) but also 300 C (572 F) is ok. Clean and cut in cubes the mushrooms, wash and clean the prawn removing the shell. When mushrooms and prawn are ready preheat in a pan 2 tablespoons of extra virgin olive oil. When the oil is hot put in the pan the mushrooms and prawn and let them cook for about 10 minutes stirring continuously.

Sprinkle with salt and parsley and cook for 5 more minutes. Cut in small cubes the mozzarella cheese.

Pour in a bowl the tomatoes puree,

add 1 tablespoon of extra virgin olive oil, salt, oregano and mix. Now all the ingredients are ready you can roll out the dough and flavour pizza.

Start with the tomatoes, spread on the surface of pizza the tomatoes very well covering the entire surface until the edge.

Put the pieces of mozzarella cheese homogeneously

and then the mushrooms and prawn that you previously cooked.

Pizza is ready to be cooked. Bake pizza for 15 - 20 minutes. Put the pizza first in the lower part of the oven so it will cook on the bottom and then after more or less 10 minutes transfer it in the upper part so it will become crunchy on the surface. Pay attention and check the cooking time by time because according to the power of your oven the cooking can change. The ideal number of pizza to cook in a normal size oven is 2, if you put more you will need more time and you have to move the pizza continuously from one to another layer of the oven. Serve hot pizza.

Tagliatelle Noodle with Ragu' of Mushrooms

Here another way to prepare an Italian recipes for a delicious ragu’. The main ingredients that I used are: carrot, celery and onion to prepare a vegetable chop; a mixture of minced meat of pork and veal, if you like you can use also meat of sausage that give a more salted taste; chopped mushrooms and tomato puree or fresh tomatoes. The secret to give to ragu a very delicious taste is to cook it on a low flame, stirring continuously time by time and for long time usually one hour is enough. During the cooking paying attention to not dry the ragu too much, so adjust with water and salt if necessary. If you use the sausage probably you will not need to add any other salt. This type of Italian ragu fits very well with tagliatelle type of noodle. Before to serve, sprinkle abundantly with Parmesan.

INGREDIENTS (for 4 people):
320 g of Noodle type Tagliatelle
1 Carrot
1/2 Onion
1 Celery
300 g of Mushrooms
100 g of Minced meat of veal
100g of Minced meat of pork (if you like you can use also sausage)
100g of Tomato Puree or fresh tomatoes
Glass of red wine
Parmesan
3 Tablespoons of Extra virgin olive oil
Salt
Black pepper

PREPARATION TIME: 15 minutes

COOKING TIME: 1 hour

WINE: Sangiovese (red wine)

PREPARATION
Preheat the extra virgin olive oil in a large pan. Clean and peel the carrot, onion and celery, chop them and add them in the pan with the hot extra virgin olive oil. Let them brown for about 5 minutes on a low flame.

and add them to the pan together with the minced meat of veal and pork, let them brown for 5 minutes.

Add a glass of wine, let it evaporate and sprinkle with salt and black pepper.

Add the tomato puree

and cover with water as shown in the picture below.

Let the ragu’ with mushrooms cook on a low flame for about 1 hour, stirring time by time and paying attention if it is necessary to add some more or water or not. During the cooking adjust with salt if necessary. I usually use the ragù with mushrooms as dressing of tagliatelle noodle. So let cook tagliatelle noodle, when they are ready pour on it the ragù with mushrooms, sprinkle with Parmesan and serve hot.

Risotto with Mushrooms and Saffron

The combination of saffron and mushrooms is very delicious! Try it with this first course!

INGREDIENTS (for 2 people)
160 g of Rice
1/2 Vegetable stock-cube
1/4 of Onion
3-4 Tablesppons of Extra virgin olive oil
25 g of Dried mushrooms
15 g of Saffron
5 g of Butter
3-4 Leafs of sage
Parmesan

PREPARATION TIME: 10 minutes

COOKING TIME: 20 minutes

WINE: Montepulciano d'Abruzzo Cerasuolo (Red wine)

PREPARATION
Prepare broth with water and 1/2 stock-cube vegetable in a pot. Put the dried mushrooms in a bowl with some water for 10 minutes.
Take the skin of 1/4 onion off and chop it. Heat the extra virgin olive oil in a pan, put in it onion and the butter and wait until they get brown. Add rice and make it roast.
Then chop the mushrooms
and add them to the rice and cook for 2-3 minutes.
Start to add 1 ladle of hot broth stirring until it is absorbed, continue in this way, adding ladles of hot broth, for about 15-18 minutes.
5 minutes before the cooking end add saffron and mix. At the end of the cooking the rice must be slightly firm to the teeth. Serve hot together with some Parmesan and some leafs of sage, if desired. This is the result:

Pappardelle with Mushrooms (Porcini)

 
This recipe is for a first course made of pappardelle (typical Italian egg pasta) and mushrooms. Believe me, this dish is delicious!

INGREDIENTS (for 2 people)
150 g of Pappardelle (egg pasta)
150 g of Mushroom fresh or frozen
Some parsley Salt Pepper
2 Cloves of garlic
Some Parmesan (Italian cheese)

PREPARATION TIME: 10 minutes
  
COOKING TIME: 10 minutes  

WINE: Greco di Tufo (White Wine)

PREAPARATION
Boil some water with salt for pappardelle. If mushrooms are fresh, clean and cut it into large cubes. Instead, if mushrooms are frozen, only wash them.

Heat extra virgin olive oil in a pot, add 2 chopped cloves of garlic and let them brown, then add the cubes of mushrooms and cook them for 10-15 minutes.

The mushrooms will produce a sauce, let it slightly dry. When cooking is complete add chopped parsley. Pour the sauce on the pasta, sprinkle with Parmesan and serve hot. This is the result:
