Tagliata of beef is a traditional
Italian main course easy to prepare if you follow some simple tricks. The best
piece of beef that you need to prepare tagliata of beef is the sirloin steak or
the entrecote. The most important thing is the cooking of the meat. First you
have to preheat the pan on a high flame, then maintaing a high flame, add the
meat and cook it for about 3-4 minutes each side in order to keep the liquid of
the meat inside itself. In this way the meat will be well cooked outside and
will be pink-red and soft inside. Usually tagliata of beef is served with
rocket salad and flakes of Parmesan.
INGREDIENTS (for 2 people):
2 Sirloin steaks of 200-300 g each with a thickness of 3-4 cm
Green pepper
Salt
2 tablespoons of extra virgin olive
oil
Rocket salad
Parmesan in flake
PREPARATION TIME: 1 hour
COOKING TIME: 10 minutes
WINE: Morellino di Scansano (Red
Wine)
PREPARATION
Sprinkle with green pepper the
sirloin steaks and let them assume the flavour for about 1 hour.
Preheat the
extra virgin olive oil in a large pan. On a high flame add to the pan the
sirloin steaks and let them cook for about 3-4 minutes for each side.
Remove
the sirloin steak from the flame and cut them in stripes.
Place in a dish the
rocket salad the stripes of sirloin steak and cover with the Parmesan flakes.
Serve hot.
